Mature silverside of beef, hand seasoned with our own unique biltong blend before being air dried.  Presented in 10 - 12 inch strips.  A gorgeous snack packed with protein.  A recent Arctic expedition purchased our biltong because of its protein packed properties.

Our dry cured smoked bacon is mase to the same recipe as our dry cured bacon.  In addition we oak smoke the pork after the curing process to give a delicious subtle taste.  £3.00 per 250 gram pack

We cure and smoke our pancetta in a the same way as we do with our bacon but using belly pork.  Our pancetta is provided to our customer's in a block which is the traditional Italian way to enable you to slice and dice it to your own requirements.  A great ingedient that adds lots of flavour to many dishes.  Super value for money with a long shelf life.  Store in a dry cool place in breathable material such as grease proof paper or muslin. Alternatively hang up in the kitchen.  Do not store in cling film.  £8.00 per block

Our sliced pancetta is the same product as our block pancetta but comes thinly sliced in a packet.  Ideal for wrapping around chicken or asparagus to add that extra special flavour.  £3.50 per 80 gram pack

We air dry our pork legs for 6 to 12 months and then they are cured for 3 to 4 weeks before being thinly sliced to perfection.  Ideal for antipasti and keeping chicken and fish moist when cooking.  £3.50 per 60 gram pack

Air dried and cured in the same way as our Cumbrian Air Dried Ham, but the curing time is reduced due to the density of the meat.  Thinly sliced.
